Introduced in 2005, the 9.47 is a relatively new addition to the pantheon of legendary French knives, but has quickly found its way to some of the most rarefied tabletops and distinguished dinner services on the planet. Now, we are bringing it to you! 

The 9.47 is an extraordinarily sharp, exquisitely manufactured cutting tool—Assembled, polished, shaped, finished and sharpened at Perceval's workshop in Thiers.

The story behind the name:

Unimpressed by the average restaurant steak knife, chef Yves Charles set out to create a new standard in slicing. Surrounded by friends and fueled by a great quantity of wine, Chef Charles conceived a table knife inspired by his favorite Thiers-made pocket knife, and made from the finest materials available. To commemorate the epiphany, and as an homage to the early-to-market (primeur) wine provided by his friend, Auvergne winemaker Stephane Majeune, he dubbed his first design the "9.47", after the ABV of the young wine from the renowned Domaine Peyra.

Slow-ground and polished using traditional techniques with scoured buffalo leather.

Handle:
Polyacetal is a high-quality polymer (plastic) which combines technical characteristics and the physical properties particularly adapted in cutlery industry. Indeed, unlike standard plastics, it shows an exceptional resistance to use, to shocks and to acid in food.
